How to Make a Mushroom Lamp from Meatballs
The ultimate Mushroom Lamp Recipe.
Ingredients: 1 lb. ground pork 2 cups white beans 2 cups water 3 cups beef broth 2 cups mushrooms, chopped 2 cups beef stock 1 tsp.
dried oregano 1/2 tsp.
kosher salt 1/4 tsp.
cumin 1/8 tsp.
cinnamon 1/3 tsp.
ground cloves 1/6 tsp.
paprika, more to taste 1/5 tsp.
onion powder 2 cups finely diced onions 1/10 tsp.
freshly ground black pepper Directions: In a large bowl, combine the ground pork and beans.
In a separate bowl, mix together the beef broth, mushrooms, beef stock, oreganos, salt, cinnamon, cloves, paprika and onions.
Mix well.
Add the beef mixture to the pork mixture.
Mix until everything is combined.
Stir in the spices.
Add a pinch of salt and pepper to taste.
Pour the mixture into the dishwasher safe dish and cook on high for 10-12 minutes until the liquid has reduced and meatballs have browned.
Remove from heat and set aside.
Add in the onions and cook for 5-6 minutes more, stirring occasionally.
Add beef broth mixture to hot water and boil for 15 minutes, or until the broth is thick and creamy.
Taste and add more salt and spices if desired.
Serve immediately with hot tortilla chips.
Recipe Notes: You can also use beef broth as an alternative to beef stock for a more creamy mushroom sauce.
It is a delicious substitute for the traditional stock and the meatballs will be rich and creamy with just the right amount of flavor.
You can use a variety of vegetables to garnish the mushroom and beef broth.
